This Chicken Frankie recipe has the smokey flavour of charcoal and hot & spicy taste of chutneys in it. This recipe can be prepared for snacks and also given in tiffins to kids.<br /><br />Ingredients:<br />(Serves 4)<br />For Preparing Green Chutney:<br />- 1/4 cup Curd<br />- 1 tsp Garlic-Ginger Paste<br />- Coriander Leaves<br />- Mint Leaves<br />- Salt<br /><br />For Preparing Smokey Chicken Frankie: <br />- 250 gms Chicken (boneless)<br />- Green Chutney <br />- 1 tsp Coriander Seeds Powder<br />- 1/2 tsp Cumin Seeds Powder<br />- 1/2 tsp Garam Masala<br />- 1 tsp Chaat Masala<br />- 1/2 tsp Black Pepper Powder<br />- 1/2 tsp White Pepper Powder<br />- 1 tbsp Lemon Juice<br />- 2 tbsp Cream<br />- Salt<br /><br />For Preparing Red Sauce:<br />- 2 tbsp Oil<br />- 1/2 tsp Mustard Seeds<br />- 1 cup Red Chutney<br />- 1 tsp Chaat Masala<br />- 2 tbsp Tamarind Pulp<br />- Salt<br /><br />For Preparing Frankie Roti:<br />- 1 cup Wheat Flour<br />- 1 cup All-purpose Four (Maida)<br />- Salt<br /><br />For Preparing Smokey Chicken Frankie:<br />- 2 tbsp Oil<br />- Marinated Chicken<br />- 1 Charcoal<br />- Onion (sliced)<br />- Cucumber (sliced)<br /><br />Method:<br />1. Take boneless chicken in a bowl, add green chutney, coriander seeds powder, cumin seeds powder, garam masala, chaat masala, black pepper powder, white pepper powder, lemon juice, cream and salt to it.<br />2. Mix all these ingredients properly. Keep the bowl aside to marinate for 1-2 hours.<br />3. To prepare red chutney- take finely chopped onion, tomato, coriander leaves, mint leaves, garlic cloves, ginger and curd in a grinder ad blend it well.<br />4. Heat a pan, add oil, mustard seeds, red chutney, chaat masala, tamarind pulp and salt. Saute this well.<br />5. Once it is cooked properly, turn off the flame and remove the red chutney in a bowl.<br />6. Take another pan, heat oil and add marinated chicken to it. Fry this in the pan for few minutes.<br />7. Take coal and heat it on gas to burn it.<br />8. Put a small bowl in the middle of the marinated chicken pan and drop the heated charcoal in it.<br />9. Pour some oil on the charcoal and finally cover the pan with a lid.<br />10. Keep it like that for a few minutes and then remove the lid. Mix the chicken well, once it is cooked turn off the flame.<br />11. Now prepare a dough - 1 cup Wheat Flour, 1 cup All-purpose flour (Maida), Salt. <br />Make rolls of the dough to prepare roti. Pat some oil on it and all-purpose flour.<br />12. Turn on flame, put Tawa to heat, keep the roti on it to cook. Once roti is made, remove it in a plate.<br />13. Take the roti, spread some mayonnaise & red chutney. Add the smokey chicken, sliced onion and sliced cucumber to it.<br />14. Roll this roti properly. Similarly, make Frankie of other roti as well.<br />Now your Smokey Chicken Frankie is ready to be served!
